The head and the ears in a Tigerlily Makes fairy kit are sewn using a blanket stitch. You can use the whip stitch or over-edge stitch, but I feel that when the fairy elf ears are showing, it not only makes it more robust but more decorative too.
The key thing to remember when working the blanket stitch around the ears is to keep the stitch depth shallow, this will allow enough space to get the stuffing into the smallest corner of the ear. See the photos, they are just a guideline to stitch width and depth, and yes it's okay to have wider deeper stitches where needed and smaller ones around the more intricate parts.
